Microwave Potato Chips

- 1 lb. red potatoes (unpeeled), scrubbed
- 1 1/2 tsp. olive oil
- 1/2 tsp. salt
Directions

1Slice potatoes into thin (1/16-inch) rounds.

2Place slices in a large bowl and cover with cold water.

3Let soak for 30 minutes. Drain potatoes and dry thoroughly on paper towels. In a medium bowl, combine potatoes, oil and salt; toss to coat evenly. Lightly oil a microwave-proof plate or coat it with nonstick spray.

4Arrange some of the potatoes in a single layer on the plate.

5Microwave, uncovered, on High for 3 to 4 minutes or until the potatoes start to become crisp.

6Check frequently and rearrange slices as needed to prevent scorching.

7Transfer chips to another plate and allow to cool completely.

8(They will crisp up even more as they cool.)

9Meanwhile, repeat the process with remaining potato slices.
