Microwave Rice Pudding

- 3/4 c. sugar
- 2 Tbsp. cornstarch
- 1/4 tsp. salt
- 2 1/2 c. milk
- 2 egg yolks
- 2 Tbsp. butter
- 1 tsp. vanilla extract
- 2 c. cooked rice
Directions

1In 1-quart casserole, blend together sugar, cornstarch and salt.

2Gradually stir in milk, mixing well.

3Microwave on High 5 to 7 minutes. Stir every 3 minutes until mixture is smooth, thickened and clear.

4Stir small amount of hot pudding into egg yolks. Return egg mixture to hot pudding, mixing well.

5Microwave 1 to 3 minutes. Add butter and vanilla. Stir. Add rice to pudding. Stir and serve.

6(Raisins may be added.)
