- 2 teaspoons olive oil
- 1 cup celery
- 4 ounces arborio rice
- 1 14 cups fat-free chicken broth
- 10 ounces lean ground turkey
- 12 teaspoon dried tarragon
- 12 teaspoon table salt
- 18 teaspoon black pepper
Directions

1In a 2-quart microwave-safe casserole, combine onion and oil, microwave for 2 minutes.

2Add rice and microwave for 1 minute.

3Add broth microwave for 6 minutes.

4Stir in chopped celery, ground chicken, and spices.

5Microwave for 8 minutes or until chicken is no longer pink.

6Remove casserole from microwave and let stand covered for 10 minutes until liquid is absorbed.
