- 2 eggs
- 1 salt and black pepper

1In a microwavable bowl, whisk the eggs well with a pinch of salt (this helps break down the egg)

2Cover bowl wuth plastic wrap.

3Microwave for 30 seconds (800W)

4Take out bowl, uncover, stir well, re-cover and microwave for 30 seconds more.

5Allow to stand for 30 seconds then uncover and stir.

6Depending on how you like your eggs, and how large they were to start with, you may wish to give them 10 seconds more.

7Remember that microwaved foods retain heat and continue cooking, so keep them a little 'wet' (I like my eggs that way, tbh)

8Serve with a little ground black pepper on top.
