- 2 Tbsp. butter or margarine
- 3 medium leeks, washed and minced
- 1 medium onion, minced
- 2 c. potatoes, finely diced
- 4 c. chicken broth
- 1 c. half and half
- salt to taste
- white pepper to taste
Directions

1In a deep 2 1/2 to 3-quart casserole, melt butter on full power 30 seconds.

2Add leeks and onion.

3Heat, uncovered, on full power 3 minutes.

4Add diced potatoes and chicken broth to butter-leek mixture.

5Heat, covered, on full power 15 to 18 minutes or until potatoes are very tender.

6Press mixture through a sieve or electric blender until smooth.

7Return mixture to casserole and gradually stir in cream.

8Add salt and pepper to taste.

9Heat, covered, on roast 6 minutes or until soup is very hot.
