  • vegetable oil
  • 1/4 medium onion (chopped)
  • 1/2 medium bell pepper (chopped)
  • 1 jalapeno pepper (diced)
  • 1/2 cup cooked black beans
  • 2 cups tortilla chips or tortillas, broken/cut into pieces
  • 4 eggs
  • splash of milk or cream
  • fresh cilantro (for garnish)
  • chopped avocado (for garnish)
  • shredded cheddar cheese (for garnish)
  • chopped tomatoes (for garnish)

Directions

    Mix the eggs and milk in a bowl and set aside

    Heat a large skillet over medium high heat.

    film the pan with vegetable oil
  4. 4
    add the onion, bell pepper and jalapeno
  5. 5
    cook for 2-3 minutes

    add the black beans and tortilla pieces (or chips)

    Mix well and allow the beans to heat through.

    Add the eggs.

    Mix until the eggs are cooked
