- 1/4 medium onion (chopped)
- 1/2 medium bell pepper (chopped)
- 1 jalapeno pepper (diced)
- 1/2 cup cooked black beans
- 2 cups tortilla chips or tortillas, broken/cut into pieces
- 4 eggs
- splash of milk or cream
- fresh cilantro (for garnish)
- chopped avocado (for garnish)
- shredded cheddar cheese (for garnish)
- chopped tomatoes (for garnish)
Directions

1Mix the eggs and milk in a bowl and set aside

2Heat a large skillet over medium high heat.

4add the onion, bell pepper and jalapeno

5cook for 2-3 minutes

6add the black beans and tortilla pieces (or chips)

7Mix well and allow the beans to heat through.
