  • 5 eggs
  • 1/4 cup Salsa
  • handful of crushed tortilla chips
  • 1/4-1/2 cup of grated cheese(white sharp cheddar is good)
  • Coconut Oil(just enough to oil pan)

Directions

    Whisk eggs in a small bowl.

    Add Salsa and chips to soak.
  3. 3
    Oil pan, and heat on Medium heat.
  4. 4
    Stir together and add to pan. Use spatula to cook the same you would do for Scrambled eggs.

    When almost cooked, add cheese and turn off heat.

    Add Salt to season(we prefer the healthy salts)
