- 2 Tablespoons Canola Oil
- 1 whole Yellow Onion, Chopped
- 2 whole Red Bell Peppers, Small Diced
- 8 whole Eggs
- 1 cup Tortilla Chips, Broken Into Pieces
- 1/2 teaspoons Sea Salt
- 1/8 teaspoons Pepper
- 4 whole Flour Tortillas
- 1/2 cups Grated Cheddar Cheese, Divided, For Serving
- 1 whole Avocado, Sliced For Serving
- 1 teaspoon Hot Sauce Or Salsa, For Serving
Directions

1Heat the oil in a large skillet over medium heat.

2Add the onion and bell pepper and saute until tender, about six minutes.

3Crack the eggs in a small bowl and whisk until foamy. Pour the eggs in with the onion and bell pepper and scramble until slightly set but not all the way cooked through. Add the tortilla chip crumbles and stir well to combine.

4Season with salt and pepper.

5Finish cooking the migas and then top tortillas with them, plus a sprinkle of cheese and avocado slices.

6Serve with hot sauce or salsa.
