Ingredients

  • 1 1/2 to 2 lb. ground beef
  • 2 cloves garlic, crushed
  • 1 medium chopped onion
  • 8 oz. sliced fresh mushrooms
  • 2 (10 oz.) pkg. frozen chopped spinach, thawed and drained
  • 2 to 3 splashes white wine (optional)
  • 3 eggs
  • Parmesan cheese to taste
  • salt and pepper to taste

Directions

    Cook ground beef, garlic and onions together in large skillet until meat is brown and onions are clear.

    Drain grease.

    Add spinach, mushrooms and wine (if desired).

    Salt and pepper to taste.

    Cover and simmer until well blended, about 4 to 5 minutes, stirring occasionally.

    Remove cover.

    Add eggs and cook until eggs are scrambled hard, stirring frequently.

    Remove from heat, sprinkle Parmesan cheese to taste.

    Serve immediately with crusty French bread.
