Millet Breakfast Casserole

- 2 cups cooked millet
- 2 tbsp flax meal plus 6 tbsp hot water
- 1-2 avacado
- 1 cup assorted nuts (almonds and cashews work nice)
- 1 tsp cinnamon
Directions

1Preheat oven to 350 degrees.

2Beat the flax meal and water together in a large bowl. Let rest for about 5 minutes, until the mixture is roughly equivalent to the consistency of eggs.

3Mash avocado's into the flax mix.

4Stir in the millet and cinnamon.

5Mix in the nuts.

6Pour into greased casserole dish (use coconut oil to grease).

7Bake 45 min.
