Millet Breakfast Casserole

  • 2 cups cooked millet
  • 2 tbsp flax meal plus 6 tbsp hot water
  • 1-2 avacado
  • 1 cup assorted nuts (almonds and cashews work nice)
  • 1 tsp cinnamon

    Preheat oven to 350 degrees.

    Beat the flax meal and water together in a large bowl. Let rest for about 5 minutes, until the mixture is roughly equivalent to the consistency of eggs.

    Mash avocado's into the flax mix.

    Stir in the millet and cinnamon.

    Mix in the nuts.

    Pour into greased casserole dish (use coconut oil to grease).

    Bake 45 min.
