Mimosa Eggs

  • 4 eggs hard-boiled
  • 2 cans tuna packed in oil
  • 3 tablespoons mayonnaise
  • 1/2 red onion finely chopped
  • lettuce Green
  • lemon
  • salt
  • 1/2 zucchini julienned, to garnish

Directions

    Peel the hard-boiled eggs, cut them in half and remove the egg yolks.

    Crumble up one of the egg yolks and place it in a bowl with the tuna, the mayonnaise, and the onion and stir well to combine until the mixture is uniform in consistency.

    Place the lettuce on a serving platter, squeeze some lemon juice over it and season with a pinch of salt.

    Fill the eggs with the egg yolk mixture and place them in the serving platter on the lettuce.

    Garnish with the julienne strips of zucchini, some thin slices of red onion, and the remaining crumbled up egg yolks which will give a mimosa flower effect.

    Serve.
