Mimosa Salad

Ingredients

  • 1 zucchini or 1 c. broccoli, diced
  • 1/2 head cauliflower, diced
  • 1 carrot, diced
  • 1/2 lb. green beans (Italian style is preferable)
  • 1 can or pkg. canned or frozen baby lima beans
  • 1 can chopped pimientos
  • 1/2 onion, diced
  • 4 Tbsp. mayonnaise
  • salt and pepper to taste
  • nutmeg to taste
  • 2 hard-cooked eggs, chopped

Directions

    Combine all the vegetables and mix in 4 tablespoons mayonnaise, some salt and pepper and as much nutmeg as your palate desires.

    More mayonnaise may be added to achieve a creamier texture.

    Chill and serve on a lettuce bed with chopped hard-boiled egg.
