  • 3 oz. butter
  • 6 oz. self-rising flour (or plain flour and baking powder)
  • 3 oz. sugar
  • 1/2 tsp. mixed spices
  • mincemeat
  • sugar

Directions

    Rub butter into flour until it is like bread crumbs.

    Stir in sugar and spice.

    Press half of mixture into a 7-inch cake tin. Spread mincemeat sparingly over and cover remaining mixture of flour.

    Press down gently but firmly.

    Bake 30 minutes at 400° until light brown.

    Sprinkle with sugar.

    Cut while still warm. Use hot or cold.

    Freezes well.
