Ingredients

  • 1 c. macaroni
  • 1 c. chopped cabbage
  • 2 Tbsp. olive oil
  • 2 Tbsp. margarine
  • 1 minced onion
  • 1/2 tsp. garlic powder
  • 4 Tbsp. parsley
  • small can tomato paste
  • 1 c. grated cheese
  • 1 tsp. oregano
  • 1/2 tsp. basil
  • 2 c. peas
  • 2 chopped celery stalks
  • 2 qt. water
  • salt
  • white pepper

Directions

    Saute onion and garlic in saucepan with butter.

    Add parsley. Mix tomato paste with boiling water (about 2 cups) and add to saucepan.

    Cook 10 minutes.

    Add vegetables and remaining water. Cook and cover for 30 to 40 minutes.

    Season with salt, pepper and oregano.

    Add macaroni and cook for 20 minutes.

    Top off with grated Parmesan cheese.
