Minestrone Soup

Ingredients

  • 2 lb. chunk beef and soup bones
  • 1 pt. tomatoes (undrained)
  • 1 (8 oz.) can tomato sauce
  • 1 medium onion, quartered
  • 1 tsp. parsley
  • 1 Tbsp. salt
  • 1 tsp. basil
  • 1/4 tsp. pepper
  • 1/8 tsp. garlic powder
  • 1 large bay leaf
  • 1 c. celery, sliced
  • 1 c. carrots, sliced
  • 1 c. macaroni (scant)
  • 1 pt. green beans and juices
  • 1 c. frozen peas
  • 1 can kidney beans (undrained)

Directions

    Cover meat and bones with water.

    When boiling, skim.

    Add tomatoes, tomato sauce, onion, parsley, salt, basil, pepper, garlic powder and bay leaf.

    Boil for 1 1/2 hours; add carrots and celery.

    Cook 1/2 hour.

    Add macaroni, green beans and peas.

    Cook another 20 minutes.

    Then add kidney beans and heat thoroughly. (Serve with Parmesan cheese and garlic bread.)
