- 2 slices bacon, diced
- 1/2 c. chopped onion
- 1/4 c. chopped green pepper
- 1/4 c. chopped celery
- 3 qt. beef broth
- 1 Tbsp. chopped parsley
- 1 c. diced potatoes
- 1 c. crushed tomatoes and juice
- 1/2 c. diced carrots
- 1/2 c. shredded cabbage
- 2 c. cooked dry beans
- 2 minced garlic cloves
- 1 Tbsp. salt
- 1/4 tsp. pepper
- 1 1/2 tsp. Italian seasoning
- 1 tsp. oregano
- 1/2 tsp. basil
- water
- 1/2 c. macaroni or other pasta
Directions

1Fry bacon until crisp; add onion, green pepper and celery. Fry over low heat, stirring frequently, until onion is limp.

2Add broth, parsley, potatoes, tomatoes, carrots, cabbage, beans, garlic, salt, pepper, Italian seasoning, oregano and basil; cover and simmer over low heat for 45 minutes or until vegetables are tender.

3Taste for seasoning.

4Add water to make up to 3 quarts. Add macaroni and cook about 10 minutes or until macaroni is tender.
