Minestrone Soup

Ingredients

  • 1 lb. Italian sweet sausage
  • 1 c. diced onions
  • 1 clove minced garlic
  • 1 c. diced carrots
  • 1 tsp. basil, crumbled
  • 2 small zucchini, sliced
  • 1 can chopped tomatoes (Italian pear, 1 lb.)
  • 2 cans beef bouillon (10 3/4 oz.)
  • 2 c. shredded cabbage
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 can (1 lb.) Great Northern beans, undrained

Directions

    Slice sausage 1/2-inch thick.

    Brown in Dutch oven.

    Add onion, garlic, carrots and basil.

    Cook 5 minutes.

    Add zucchini, tomatoes with liquid, bouillon, cabbage, salt and pepper.

    Bring soup to a boil and simmer 1 hour (covered).

    Add beans with liquid and cook 20 minutes.
