- 2 (8 oz.) pkg. cream cheese, softened
- 2 eggs
- 1 tsp. vanilla
- 3/4 c. sugar
- 1 Tbsp. lemon juice
- 18 to 24 vanilla wafers
- 1 can cherry pie filling
- Cool Whip
Directions

1Beat all ingredients together (except for wafers, cherries and Cool Whip).

2Place wafers in cupcake papers and into muffin or tart tins.

3Pour batter over wafers.

4Bake at 375° for 15 to 17 minutes.

5Do not overbake.

6Let cool completely.

7Top with cherry pie filling, or any other pie filling and Cool Whip.
