Mini Chocolate Souffles

- 1 cup Butter
- 1 cup Sugar
- 8 oz Dark Chocolate
- 2 tbsp Water
- 1 pinch Salt
- 3/4 tsp Vanilla
- 2 tbsp Cocoa
- 8 Eggs (6 yolks, 8 whites)
- 1 tsp Cream of Tartar
Directions

1Grease mini ramekins with butter and coat with sugar.

2Wrap parchment paper strip around them, securing with cooking string, to make sure they do not overflow when baking.

3The parchment paper should be at least 2 inches above the top of the ramekin.

4Melt together chocolate, water, salt and butter.

5Stir to mix thoroughly.

6Add vanilla and whisk in cocoa until smooth.

7In another bowl, Beat yolks and sugar until light and thickened.

9Fold in chocolate mixture.

10In clean bowl, beat egg whites until foamy.

11Add cream of tartar and continue beating until stiff peaks form.

12Fold in chocolate mixture until there are no streaks.

13Divide evenly among 8-10 mini ramekins and bake 350?

14until edges are firm and centre is still jiggly.
