- 1/2 pounds, 2-5/8 ounces, weight Flour (all Purpose Or Cake)
- 2-2/3 ounces, weight Common Rice Flour (not Glutinous)
- 1/2 ounces, weight Baking Powder
- 7 ounces, weight Sugar
- 1/2 pounds, 2-5/8 ounces, weight Warm Water
Directions

1Sift together flour, rice flour, and baking powder. Stir in sugar. Add water and beat until shiny.

2Heat a large steamer over high heat. Use a small (12 count) mini muffin tin so it will fit in the steamer. Place small baking cups in the tin and fill almost to the top with batter. Don't underfill or you won't get the dramatic puffiness that is the point of Fa Gao.

3Steam over high heat for 12 minutes.
