- 5 eggs
- 1 c. sugar
- 1 tsp. vanilla
- 1 tsp. lemon juice
- 3 (8 oz.) pkg. cream cheese
- vanilla wafers
Directions

1Beat eggs.

2Add sugar, vanilla and lemon juice.

3Add softened cream cheese; beat with mixer until light and fluffy.

4Line muffin pans with paper muffin cups.

5Place a vanilla wafer in the bottom of each cup.

6Fill cups 2/3 full with cream cheese mixture.

7Bake at 375° for 15 to 20 minutes, or until set.

8Let stand 5 minutes. You can serve as is or top with your favorite jam.
