Miniature Cream Cheese

  • 2 pkg. cream cheese (room temp)
  • 2 eggs (room temp)
  • 1 c. sugar
  • 1 tsp. Griffin's Vanilla
  • 1 sm. box vanilla wafers

Directions

    Beat until fluffy cream cheese, eggs, sugar, and vanilla. Place vanilla wafer in cup cake pan in cup cake liner.

    Spoon mixture in 1/2 fill.

    Bake at 350° for 10-20 minutes or until inserted toothpick comes out clean.

    Cool completely.

    Top with any canned pie filling.

    Gingersnaps with apple or peach filling may be used as well. Excellent!!! Refrigerate in tins.
