- 2 pkg. cream cheese (room temp)
- 2 eggs (room temp)
- 1 c. sugar
- 1 tsp. Griffin's Vanilla
- 1 sm. box vanilla wafers
Directions

1Beat until fluffy cream cheese, eggs, sugar, and vanilla. Place vanilla wafer in cup cake pan in cup cake liner.

2Spoon mixture in 1/2 fill.

3Bake at 350° for 10-20 minutes or until inserted toothpick comes out clean.

4Cool completely.

5Top with any canned pie filling.

6Gingersnaps with apple or peach filling may be used as well. Excellent!!! Refrigerate in tins.
