Mint Lychee Collins

Ingredients

  • 2 ounces, fluid Gin
  • 1 ounce, fluid Pureed Litchis (see Note)
  • 1/2 ounces, fluid Lemon Juice
  • 1/2 ounces, fluid Simple Syrup
  • 2 sprigs Mint
  • 2 ounces, fluid Club Soda
  • Ice For Serving
  • Litchis, Peeled, For Serving If Desired

Directions

    Add the gin, lychee puree, lemon juice, simple syrup and mint leaves to a tall Collins glass. Muddle the mint with a muddler or wooden spoon. Top with the club soda and fill with ice. Garnish with some additional lychees if desired.

    Note for the pureed litchis: Peel the litchis, remove the pit and puree in a small food processor. You should net about 1 ounce of puree for every 4 litchis.
