Ingredients
- 1 cup plus 2 tablespoons chopped fresh mint
- 1/2 cup canned beef broth
- 1/3 cup minced shallots
- 6 tablespoons red wine vinegar
- 1/4 cup sugar
- 2 teaspoons cornstarch
Directions

1Combine 1 cup mint, shallots, vinegar and sugar in heavy small nonaluminum saucepan.

2Stir over medium heat until sugar dissolves.

3Simmer 2 minutes.

4Remove from heat.

5Cover and let stand 2 hours.

6Strain sauce into large glass measuring cup.

7Place cornstarch in same saucepan.

8Gradually whisk is sauce.

9Bring to simmer over medium heat, stirring constantly.

10Stir until sauce thickens slightly and turns translucent, about 2 minutes.

11Remove from heat.

12Cool to room temperature.

13(Can be prepared 1 day ahead.

14Cover and refrigerate.

15Bring to room temperature before continuing.)

16Stir in remaining 2 tablespoons mint.
