- 1 Tbsp. margarine
- 2 Tbsp. flour
- 5 c. chicken broth
- 1 tsp. grated lemon rind
- 2 Tbsp. lemon juice
- 1 c. cubed, cooked chicken
- 2 Tbsp. minced fresh mint
Directions

1In a large heavy saucepan, melt the margarine over moderate heat, then blend in the flour and cook, stirring for 4 minutes. Slowly whisk in the chicken broth, the lemon rind and lemon juice and heat, stirring constantly, just to the boiling point (about 5 minutes).

2Adjust the heat so that the mixture simmers and cook, stirring occasionally, for 5 minutes.

3Add the chicken and cook 1 minute more over low heat.

4Stir in the mint.
