Minted Lamb Chops

Ingredients
- 2 tablespoons olive oil
- 2 tablespoons of fresh mint, chopped
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground black pepper
- 4 lamb loin chops (1-inch thick, about 4 to 5 ounces each)
- mint leaf, for garnish
Directions

1In a small bowl, combine oil, mint, garlic, salt, cumin, coriander, cayenne and black pepper. Spread on both sides of each chop. Set aside to marinate for 30 minutes at room temperature.

2Preheat broiler to high. Place chops under broiler and cook about 4 minutes per side, until nicely browned.
