- 3 garlic cloves, smashed
- 1 English cucumber
- 14 small red onion, finely chopped
- 12 cup of fresh mint, coarsely chopped
- 12 cup plain yogurt (sour cream if you wish)
- 2 tablespoons olive oil
- 14 teaspoon salt
- 18 teaspoon pepper, freshly ground
- fresh mint sprig (to garnish)
Directions

1Press garlic, slice cucumber in half lengthwise.

2Using a small spoon, scrape out and discard seeds.

3Thinly slice cucumber.

4Place garlic, cucumber, onion and mint in a large bowl.

5In a small bowl, stir yogurt with oil, salt and pepper until blended.

6Stir yogurt mix into cucumber mix.

7Refrigerate for at least 30 minutes.

8Will keep well in fridge for a day.

9Can be served in lettuce cups.
