- 1/2 c. dried shrimp
- 5 c. water
- 3/4 c. miso
- 1/2 cube tofu
- 3/8 c. green onion
- Saimin noodles, optional
Directions

1Cook shrimp in water for 10 minutes.

2Bring water to a boil and let simmer.

3Put miso in strainer (over a pot) and pour shrimp water through until all miso is dissolved.

4Cut tofu into 1/2-inch cubes and add to stock.

5Bring to a boil.

6Remove from fire and add finely chopped green onions.

7Saimin noodles may also be added at the same time as the tofu for a heavier soup.
