- 8 slices bacon, cooked and crumbled
- 1 (28 oz.) can pork and beans
- 1 (15 oz.) can chile beans, undrained
- 3/4 c. finely chopped onion
- 1/2 c. packed dark brown sugar
- 1 (8 oz.) can enchilada sauce
- 1 Tbsp. flour (use an extra tsp. flour if watery)
- 2 tsp. chile powder
- 1 tsp. ground cumin
- 1/8 tsp. garlic powder
- 1 c. (4 oz.) shredded Monterey Jack cheese
Directions

1Combine all ingredients, except cheese.

2Place in a 2-quart casserole.

3Bake uncovered at 475° for 15 minutes.

4Reduce heat to 375° for 30 minutes, stirring occasionally.

5Sprinkle with cheese. Bake 15 minutes longer (8 to 12).
