Ingredients

  • 8 slices bacon, cooked and crumbled
  • 1 (28 oz.) can pork and beans
  • 1 (15 oz.) can chile beans, undrained
  • 3/4 c. finely chopped onion
  • 1/2 c. packed dark brown sugar
  • 1 (8 oz.) can enchilada sauce
  • 1 Tbsp. flour (use an extra tsp. flour if watery)
  • 2 tsp. chile powder
  • 1 tsp. ground cumin
  • 1/8 tsp. garlic powder
  • 1 c. (4 oz.) shredded Monterey Jack cheese

Directions

    Combine all ingredients, except cheese.

    Place in a 2-quart casserole.

    Bake uncovered at 475° for 15 minutes.

    Reduce heat to 375° for 30 minutes, stirring occasionally.

    Sprinkle with cheese. Bake 15 minutes longer (8 to 12).
