  • 1 (8 oz.) carton sour cream
  • 1 (8 1/2 oz.) can cream-style corn
  • 1/2 c. salad oil
  • 1 c. self-rising cornmeal
  • 1/2 tsp. salt
  • 1 heaping tsp. baking powder
  • 2 eggs

Directions

    In a bowl, mix together sour cream, corn and oil.

    Stir in cornmeal, salt, baking powder and eggs.

    Pour batter into well-greased 9-inch square pan or 12-cup muffin tin.

    Bake at 375° for 30 minutes for bread or 20 to 25 minutes for muffins.
