- 3/4 c. rice
- 3/4 tsp salt
- 2 Tbsp olive oil
- 1 Large shallot chopped
- 2 garlic cloves chopped
- 1/4 cup cranberries
- 1/4 cup chopped apricots
- 1/4 cup raisins
- 3/4 tsp ground coriander
- 1/3 cup chopped pistachios
- 3 Tbsp fresh chopped cilantro
Directions

1Heat oil in saute pan

2Saute shallot and garlic 2 minutes

3Saute dried fruit 2 minutes with coriander

4Add rice saute 1 more minute

5Transfer to rice cooker and 1 1/2 cups water with salt and cook according to directions.

6Transfer to serving bowl and garnish with pistachios and cilantro and serve.
