Mixed Fruit Rice Pilaf

Ingredients

  • 3/4 c. rice
  • 3/4 tsp salt
  • 2 Tbsp olive oil
  • 1 Large shallot chopped
  • 2 garlic cloves chopped
  • 1/4 cup cranberries
  • 1/4 cup chopped apricots
  • 1/4 cup raisins
  • 3/4 tsp ground coriander
  • 1/3 cup chopped pistachios
  • 3 Tbsp fresh chopped cilantro

Directions

    Heat oil in saute pan

    Saute shallot and garlic 2 minutes
  3. 3
    Saute dried fruit 2 minutes with coriander
  4. 4
    Add rice saute 1 more minute

    Transfer to rice cooker and 1 1/2 cups water with salt and cook according to directions.

    Transfer to serving bowl and garnish with pistachios and cilantro and serve.
