Mixed Vegetable Casserole

  • 3 (10 oz.) pkg. frozen mixed vegetables
  • 1 1/2 c. shredded Cheddar cheese
  • 1 c. chopped celery
  • 1 c. chopped onion
  • 1 c. mayonnaise or salad dressing
  • 1/4 tsp. pepper
  • 1 1/2 c. crushed Ritz round crackers
  • 1/4 c. soft margarine or butter

Directions

    Cook vegetables according to package directions; drain. Combine with cheese, celery, onion, mayonnaise and pepper.

    Turn mixture into a 13 x 9 x 2-inch baking pan. Combine crackers and margarine. Sprinkle over vegetable mixture.

    Bake, uncovered, in a 350° oven for 20 to 25 minutes or until heated through. Makes 10 to 12 servings.
