Mixed Vegetable Pilaf

- 2 Tbsp. margarine or butter
- 1 c. sliced fresh mushrooms
- 1/4 tsp. dried basil leaves, crushed
- 1 (10 1/2 oz.) can Campbell's condensed chicken broth
- 3/4 c. water
- 1 c. regular rice (uncooked)
- 1 small zucchini, halved lengthwise and sliced
- 1/2 c. shredded carrot
Directions

1In 10-inch skillet over medium heat, in hot margarine, cook mushrooms and basil 3 minutes, stirring occasionally.

2Add broth and water; heat to boiling.

3Stir in rice; return to boiling. Reduce heat to low.

4Cover; simmer 15 minutes.

5Stir in zucchini and carrot.

6Cover; simmer 5 minutes.

7Remove from heat.

8Let stand covered 5 minutes before serving.

9Makes about 5 cups or 6 servings.
