Ingredients

  • 1 c. sugar
  • 1/2 c. margarine or butter, softened
  • 1 1/2 tsp. vanilla
  • 1 egg
  • 1 1/2 c. all-purpose flour
  • 1/4 c. cocoa
  • 2 Tbsp. instant coffee crystals
  • 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • caramel icing

Directions

    Beat sugar, margarine, vanilla and egg in a medium bowl until light and fluffy.

    Stir in remaining ingredients except caramel icing.

    Cover and refrigerate 1 hour, until chilled.

    Heat oven to 375°.

    Roll dough 1/8-inch thick on lightly floured surface.

    Cut into cookies.

    Bake on greased cookie sheet until brown.
