Mocha Pound Cake

  • 2/3 c. softened shortening
  • 2 c. sifted cake flour
  • 1 1/4 c. sugar
  • 1 Tbsp. instant coffee
  • 1 tsp. salt
  • 1/2 tsp. cream of tartar
  • 1/4 tsp. soda
  • 1/2 c. water
  • 1 tsp. vanilla
  • 3 eggs
  • 2 (1 oz.) sq. unsweetened chocolate, melted

Directions

    Mix shortening, flour, sugar, instant coffee, salt, cream of tartar and soda.

    Add water and vanilla.

    Mix until flour is moistened.

    Then beat vigorously 2 minutes.

    Add eggs and melted chocolate.

    Beat 1 minute longer.

    Pour into paper lined 9 1/2

    x 5 x 3-inch loaf pan.

    Bake at 325° for 65 to 70 minutes or until done.

    Cool in pan 10 minutes, then remove.

    Cool completely, then add confectioners sugar over top.
