Ingredients
- 1/2 c. margarine
- 1 1/2 c. semi-sweet chocolate chips
- 1 Tbsp. instant coffee crystals (optional)
- 3/4 c. sugar
- 3/4 c. brown sugar, packed
- 2 eggs
- 2 tsp. vanilla
- 2 c. flour
- 1/3 c. unsweetened cocoa
- 1/2 tsp. baking powder
- 1/4 tsp. salt
Directions

1In a large saucepan, melt shortening.

2Add 1/2 cup chocolate chips; heat over low heat until chips melt.

3(Watch these; do not let the chocolate scorch.)

4Stir in coffee crystals; blend until they dissolve.

5Stir in sugar, eggs and vanilla.

6In a medium mixing bowl, combine the flour, cocoa, baking powder and salt. Stir into the coffee mixture.

7Add 1 cup chocolate chips.

8Drop by rounded teaspoonfuls or tablespoonfuls onto lightly greased cookie sheet.

9Bake at 350° for 10 minutes.

10Let cool 1 minute before removing from sheet.

11Makes 3 dozen of the large size cookies. (Some people prefer the cookies without the coffee flavor.)
