- pastry (for 2-crust 9-inch pie)
- 36 Ritz crackers, coarsely broken (2 c.)
- 2 c. water
- 2 c. sugar
- 2 tsp. cream of tartar
- 2 tsp. lemon
- rind of 1 lemon, grated
- 2 Tbsp. Blue Bonnet
- vegetable oil spread
- 1/2 tsp. cinnamon
Directions

1Roll out half the pastry and line a 9-inch pie plate.

2Place crackers in crust.

3In saucepan over high heat, bring water, sugar and cream of tartar to boil; simmer for 15 minutes.

4Add lemon juice and rind; cool.

5Pour syrup over crackers.

6Dot with spread. Sprinkle with cinnamon.

7Roll out remaining pastry; place over pie. Trim, seal and flute edges.

8Slit top crust to allow steam to escape.

9Bake at 425° for 30 to 35 minutes or until crust is golden.

10Cool completely.
