- 2 cups Peeled And Coarsely Grated Zucchini (squeeze Out Extra Moisture)
- 1 cup Minced Onion
- 2 Tablespoons Minced Red Pepper
- 2 Tablespoons Minced Celery
- 1 cup Italian Bread Crumbs
- 2 Tablespoons Mayonnaise
- 1 Tablespoon Old Bay Seasoning
- 2 whole Beaten Eggs
- Panko Bread Crumbs
Directions

1Combine all ingredients (except Panko bead crumbs) in a bowl.

2The texture can be adjusted if its too dry, add another egg or a little bit more mayonnaise; if too wet, add more bread crumbs.

3Form mixture into patties and coat the patties in Panko bread crumbs.

4Heat some oil (and a little butter) in a non-stick skillet, just enough to coat the bottom of the pan, not enough to deep-fry.

5Fry over medium heat until golden brown on both sides, about 2 to 3 minutes per side.

6Makes 8 big or 10 medium cakes.

7Serve with a wedge of lemon and a little tartar sauce.
