Ingredients
- 1/4 pound sole fillets plaice, or cod, fresh
- 6 each egg yolks
- 2 tablespoons scallions, spring or green onions chopped, scallions, white parts only, or to taste
- 1 teaspoon sesame oil
- 1/4 teaspoon monosodium glutamate optional
- 1/4 teaspoon salt
- 18 teaspoon white pepper
- 1 cup lard for deepfrying
- 5 tablespoons soy sauce, tamari
- 3 tablespoons vinegar
Directions

1Steam the fish for 10 minutes and flake it gently.

2Mix the egg yolks together with the spring onions, sesame oil, MSG, salt and white pepper.

3Add the fish and mix it in.

4Fry tablespoons of the mixture in fairly deep fat, until the sides are almost brown or pinkish gold.

5The fat will foam, but this cannot be helped.

6The final texture must be firm.

7Serve hot with a separate dish of soy sauce mixed with vinegar.

8Excellent with warmed wine.
