- 1 (12 ounce) package firm tofu
- 1 cup light mayonnaise
- 2 tablespoons mustard
- 1/2 cup pickle relish (sweet or dill)
- 1/2 cup chopped onion
Directions

1Open tofu package. Drain and dry tofu.

2Put tofu in large bowl and dice into cubes.

3Add mayo, mustard, relish and onion and gently stir, spread on bread and eat.

4Variations: Try making it half yogurt in the mayo for less calories. Add real boiled eggs and double your protein. Try sweet hot mustard for a little kick. For extra crunch, add diced bits of celery and apple. Have fun, try to experiment a little.
