Mock Lemon Pie

Ingredients
- 1 1/2 c. rhubarb
- 1 c. sugar
- 1/2 c. water
- 1/2 c. sugar
- 1/4 c. flour
- pinch of salt
- 1/2 c. nuts
- 2 egg yolks
- 1 1/2 c. milk
- 1 Tbsp. margarine
- 1 tsp. vanilla
Directions

1Cook rhubarb, sugar and water until rhubarb is tender and water dissolved.

2Mix well in saucepan the sugar, salt and flour. Then add and mix well the 1/2 cup milk, 2 egg yolks and when batter is smooth, add 1 1/2 cups of milk.

3Cook over medium heat, about 8 minutes, stirring constantly, until thick.

4Remove from heat and add margarine, vanilla and rhubarb.

5Stir well. Place in baked pie shell. Cover with meringue.

6Brown in oven.
