- cod fillets, thawed
- 3 Tbsp. white vinegar
- fresh lemon
- water
- salt and pepper
Directions

1Season cod fillets with salt and pepper.

2Lay on rack (a cake cooling rack works!) in a heavy, covered skillet.

3Pour water into skillet to a level just below touching the cod.

4Add 3 tablespoons vinegar and water; cover and bring to a boil.

5Reduce heat and simmer for 10 to 15 minutes, until fish is cooked through.

6Squeeze fresh lemon juice over (and if calories are no problem, melted butter).
