- 1 qt. milk
- 1 Tbsp. salt
- onion (optional)
- green pepper (optional)
Directions

1Peel and dice eggplant.

2Cover with cold water; add salt. Bring to boil and cook until tender but not soft (about 15 minutes).

3Drain.

4In another pan heat milk, butter and eggplant. Minced onion and green pepper may be added if preferred.
