  • 3 eggs
  • 1/2 c. plus 1 Tbsp. granulated sugar
  • 1/3 c. light corn syrup
  • 1/3 c. pure maple syrup
  • 2 Tbsp. margarine, softened
  • 1/4 tsp. salt
  • 1/2 tsp. cider vinegar
  • 1 tsp. vanilla extract
  • 1 c. uncooked quick oats
  • 1/2 c. chopped pecans
  • 1 unbaked pie crust

Directions

    In a large bowl with electric mixer, beat whole eggs, sugar, corn syrup, maple syrup, margarine and salt.

    Add vinegar and vanilla and beat well.

    Using a large wooden spoon, stir in oats and pecans.

    Pour into prepared pie crust.

    Bake at 450° for 5 minutes, then reduce heat to 300° and bake for 35 minutes.

    Cool before serving.
