Modena Mushroom Salad

Ingredients
- 1 clove garlic
- 1/2 c. Filippo Berio extra virgin olive oil
- 1/2 c. balsamic vinegar
- 1/2 tsp. oregano
- 1 tsp. fresh basil
- 1 (12 oz.) pkg. small to medium sized mushrooms
- 1 bunch romaine lettuce
- 1 medium raw carrot
- 2 to 3 Tbsp. Feta cheese
Directions

1Wash mushrooms, lettuce and carrot; set on cotton dish towel to dry.

2Break garlic and rub on inside of 1-quart resealable container (Mason jar or plastic).

3Add olive oil, vinegar, oregano, basil, remainder of garlic and mushrooms.

4Prepare in the morning and leave out during the day, upending periodically to mix.
