Modena Mushroom Salad

Ingredients

  • 1 clove garlic
  • 1/2 c. Filippo Berio extra virgin olive oil
  • 1/2 c. balsamic vinegar
  • 1/2 tsp. oregano
  • 1 tsp. fresh basil
  • 1 (12 oz.) pkg. small to medium sized mushrooms
  • 1 bunch romaine lettuce
  • 1 medium raw carrot
  • 2 to 3 Tbsp. Feta cheese

Directions

    Wash mushrooms, lettuce and carrot; set on cotton dish towel to dry.

    Break garlic and rub on inside of 1-quart resealable container (Mason jar or plastic).

    Add olive oil, vinegar, oregano, basil, remainder of garlic and mushrooms.

    Prepare in the morning and leave out during the day, upending periodically to mix.
