  • 1 c. flour
  • 1 c. cornmeal (yellow or white)
  • 1/4 c. sugar
  • 2 tsp. baking powder
  • 3/4 tsp. salt
  • 2 eggs, beaten
  • 1 c. milk
  • 1/4 c. oil

Directions

    In mixing bowl, combine flour, cornmeal, sugar, baking powder and salt.

    Mix with wire whisk.

    Add eggs, milk and oil.

    Beat with whisk or spoon just until moistened.

    Bake at 400° for 20 to 25 minutes until bread tests done.

    Cut in squares and serve with butter and favorite jelly.
