  • 1 fry oil
  • 1 whole tilapia per person guted and clean.

    i cook mine outside in a casuela used to make carnitas.

    fill anout half full of oil and heat oil.

    make slit marks in each fish like u would in a ham

    salt each fish generously

    when oil is heated cook one at a time.

    slowly lay a fish in the oil and do not move, let cook about 4 minutes then carefully turn to other side.

    repeat for each fish, when serving make sure to eat with caution these fish have a lot of bones...
