  • 1/2 c. olive oil
  • 1 1/2 c. water
  • 2 Tbsp. Spanish capers
  • 2 Tbsp. vinegar
  • 2 bay leaves
  • 24 olives
  • 2 cans tomato sauce (8 oz.)
  • 1 (4 oz.) jar diced pimientos
  • 2 1/2 lb. onions, sliced
  • 4 lb. favorite fish
  • 2 Tbsp. salt
  • 1 clove garlic

Directions

    Add the first 9 ingredients in a saucepan and cook for 1 hour (moderate heat).

    Cook fish (season before cooking with salt and garlic).

    Serve fish with sauce.

    Great if served with white rice.
