Molded Spinach Salad

Ingredients

  • 2 pkgs. (10 oz.) frozen spinach
  • 2 envelopes unflavored gelatin
  • 1 can (10 1/2 oz.)beef consomme
  • 4 hard cooked eggs, diced
  • If placing in one 4 cup mold - 1 extra hard cooked egg to be sliced lengthwise in 8 slices and used for garnish
  • 3/4 cup mayonnaise
  • 1 tsp salt
  • 2 TBS fresh lemon juice
  • 3/4 TBS Worcestershire Sauce
  • dash tabasco

Directions

    Defrost spinach; squeeze dry.

    Soften gelatin in 1/2 cup cold consomme, heat remaining consomme. Add heated consomme to gelatin mixture and chill until partially congealed.

    Add eggs, mayonnaise and seasonings to spinach, then fold into gelatin mixture. Pour into a 4 cup fluted mold, or 8 individual molds. Chill until set.

    Unmold 4 cup mold on serving plate and garnish top with egg slices to form flower petals. (May use a cream cheese ball as center of flower.

    For individual moldsm unmild on a leaf lettuce leaf.
