Mole Seitan

Ingredients

  • 2 cups seitan room temperature, thinly sliced
  • 1 onion medium
  • 2 jalapeno peppers cut in bite size pieces
  • 15 ounces tomato sauce or stewed tomatoes
  • 1 cup vegetable stock
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon allspice
  • 1/4 teaspoon cinnamon
  • 1 ounce chocolate unsweetened cooking
  • 1 flour tortilla cut in small pieces

Directions

    Saute onion and pepper in 3 tablespoons broth for about 5 minutes, until onions are transparent and peppers soft. Add all ingredients except chocolate and tortilla and bring to a simmer, then add chocolate and tortilla pieces.

    When chocolate has completely melted, blend or process until smooth. Return to pan, add seitan and heat on low.

    Serve with Spanish rice, beans and corn bread or tortillas. Can substitute cooked vegetables for the seitan.
